Under Uisce Éireann and trade effluent regulations (and local authority / FOG programme), food service establishments are generally required to have grease traps and schedule regular cleaning.
Best practice: clean when the trap is about 25% full of FOG/solids, or at least every 3-6 months, depending on usage. Heavy-use kitchens (fried foods, high volume) may require cleaning monthly

Depending on the amount of FOG your kitchen produces, trap size, and the type of food cooked. Many regular-use kitchens need monthly or quarterly cleaning. Legally, Grease Traps need to be cleaned 4 times a year.
What happens if I don’t clean regularly?
Increased blockages, foul odours, overflow into drains, potential regulatory fines, higher maintenance or repair costs, and possible forced shutdown or closure in bad cases.
Is it legal to wait until there’s a problem to clean?
No — regulations/trade effluent licences often require scheduled cleaning & regular waste removal. Cleaning at only emergency moments risks non-compliance.
Can I use biological / enzyme dosing instead of physically cleaning?
Dosing units can help reduce buildup and delay the need for cleaning, but don’t replace physical removal of FOG/solids. Also, check local legality/acceptance.
